Try these super simple, 4 ingredient Cherry Coconut Creamsicles for a delicious and refreshing treat
INGREDIENTS
- 1 (15 oz) can coconut milk (or heavy cream)
- 1 tsp vanilla extract
- 1/4 cup maple syrup or honey
- 1 3/4 cup CherryHill Orchards cherries, fresh or frozen
METHOD
- In a large bowl, add the coconut milk, vanilla extract and 3 tbsp maple syrup. Whisk until the mixture is well combined. Add more maple syrup if needed and set aside
- Use a blender to blend the cherries with the remaining maple syrup until mixture is smooth. Add more maple syrup if required.
- Divide the cherry puree equally between your popsicle molds. Place the molds in the freezer for 15 minutes, or until set
- Pour in the coconut milk mixture on top of the cherry puree. Insert popsicle sticks into the molds, and freeze for at least 2 hours, or until firm.
